What we do

In our farm, the not very extensive vineyards enables us to produce an excellent Chianti Classico Gallo Nero wine, even if in limited quantity.
This limited quantity gives us the opportunity to care for our production with great attention.
We do not ever use weed killers and the soil is cultivated as the grandfather did in the past, that is manually where the mechanical aids cannot be used.
Our vineyards lay on a stony soil in an excellent hill position where the sun heats the bunches all day long.
Our grapes varieties are “Sangiovese, Cabernet, Merlot and Colorino” which are conveniently blended in our wine. It is kept in stainless steel vats which preserve its flavour and taste.  A professional enologist follows the different steps of wine-making process.
Another product of ours is “Vin Santo” (Holy Wine), a Tuscan dessert wine, whose name derives from its use during the Mass.
The preparation of this wine is very long: after the harvest , the grapes must be kept  on straw mats  for  months. Then they are pressed and put in small wooden barrels where they remain  for at least three years for the ageing. Everybody is invited to taste this special wine!
Another excellence of our production is “Extravergine” Olive Oil. In our farm there are about 800 olive trees of different cultivars (Morellino, Leccino, Moraiolo) which give a special quality of olive oil with a palatable taste with bitter artichoke aftertaste.
Our olive oil, cultivated and produced in Greve in Chianti, are qualified as Italian Tuscan Olive Oil.
The olives are pressed with a cold-working in the small but professional  oil mill at Panzano which means major guarantee on the finished product.
